What’s for dinner? How about some easy peasy delicious mustard chicken drumsticks! Here’s a quick recipe that you can basically change up however you like. This is what I whipped up for myself the other night. Too bad Chris wasn’t home to share it with me!!
(Sorry the pic isn’t great… it was late and I just used my phone… Photo fail.)
Essentially, here’s the recipe. Sorry, it’s not more difficult!!
Throw your drumsticks in a bowl and toss on a few heaping tablespoons of grainy mustard, a generous sprinkle of paprika, a few cloves of crushed garlic, a splash of oil*, a generous grind of fresh pepper and a couple pinches of salt. Sear all sides of the drumsticks until toasty in a medium hot cast iron and transfer to a 350 degree oven with a cm of water added to the pan. Cook until the water evaporates and the skin pulls away from the bone.
Enjoy with such delights as baked home fries with roasted garlic curry mayo and a gorgeous green salad.
Give it a go and let me know how it turned out!
*I unfortunately just ran out of heat-friendly oil, so just used not-so-awesome ‘vegetable oil’ (aka GMO soybeans). It’s not great to use oils like olive oil for high heat situations. If I had a choice, I would have used some grapeseed oil instead.
