It’s super easy to make a grilled cheese sandwich more interesting. This was a great lunch I whipped up a while ago that can be adapted with whatever you have at hand.
First I fried up thick mushroom slices in olive oil. Then brushed two slices of organic kamut bread with olive oil on both sides. I put one slice in a pan on medium heat and piled on the mushrooms, some sundried tomatoes and soft goat’s cheese, and then the other slice of bread. I fried it until it was toasty on both sides. It was sooooo delicious!
I can imagine this being good with other kinds of cheese, slices of cured meat, marinated artichoke hearts, slices of olives, etc.
