This cake was delicious. Clearly. Organic pears, fair trade cocoa… We ate that up fast!
It was quite a bit of work though. I’m used to making my classic 6-minute chocolate cake. This was about 30 minutes or more to mix, plus baking, plus glazing ….
The pears were sauteed in a sugar, lemon syrup first, then placed in the pan. The batter was whipped up and carefully poured over the pears. Once baked, the remaining syrup from the pears was boiled down and dribbled over the cooled, upside down cake. Then we had to wait more for it to cool before we could eat it!
I guess I can’t complain about midnight upside-down pear cake!
